Cupcakes:
1 cup Guinness beer
1 cup unsalted butter
3/4 cup cocoa powder
2 cups all-purpose flour
2 cups sugar
1 1/2 tsp baking soda
3/4 tsp salt
2 large eggs
2/3 cup sour cream

Icing:
3-4 cups confectioners sugar
1/2 cup unsalted butter at room temperature
3-5 Tbsp Bailey's Irish Cream (or more for consistency)

Preheat oven to 350º
Cupcakes:
Cook the cup of butter in the microwave in one minute intervals until completely melted. Slowly add the cup of Guinness using a whisk. Once mixed, add cocoa and whisk together. Set aside to cool.
In a separate bowl mix together dry ingredients and set to the side.
In a mixer combine eggs and sour cream until blended. Slowly start adding the chocolate mixture. Slowly add in the flour mixture. When completely blended fill lined muffin cups using a large scoop or 2/3 full using batter. Bake for 20 minutes.

Icing:
Whip up butter in mixer until smooth. Slowly add confectioner's sugar alternating with the tbsp of Bailey's. Add more Bailey's if needed for consistency.

Pipe onto cooled cupcakes using a 1M tip. Pipe a dollop in the center and swirl around the outside. Sprinkle with green decorations.
