2 T. Olive oil
• ¼ cup Garlic, sliced into thin slivers
• 2 ¼ cups Tomato sauce, store bought or homemade
• ½ t. Crushed red chili flakes
• 1 ½ lbs Penne pasta
• 4 Tomatoes, vine-ripe style
• 2.5 t. Parsley, chopped
• ½ cup Parmesan cheese, grated
• 2.5 T Basil leaves
• Salt & pepper to taste

Heat the oil to medium. Fry the garlic slivers until they just turn golden brown. Remove and set aside.

Cut an “x” on the top of the tomatoes and drop into boiling water for 30-45 seconds. The skins will start to peel off. Remove and immediately place into an ice water bath. When cool, remove the skins from the tomatoes. Cut open and remove the seeds. Discard the seeds. Chop the remaining tomato flesh into small cubes.

Heat the tomato sauce and add the chili flakes. Season to taste with salt & pepper.

Boil water and cook the pasta until al dente. Drain the pasta and add to the tomato sauce. Add the chopped tomato and toss.

Chop the parsley. Roll up the basil leaves into a cylinder and chop.

Place the pasta into bowls for serving. Garnish each with fried garlic, parmesan cheese, parsley and basil.
