2-3 Lbs CHEAP pork roast (bone in)
10-15 Hatch (Anaheim) mild green chili's, roasted and peeled
1 12 oz can diced tomatoes
3 tabs Garlic Salt
3/4 all purpose flour

Directions:
Directions:
Roast green chili's, remove stems, skin and seeds. Rinse, then dice into 1/4 inch pcs. Sprinkle 1 1/2 tbs of the garlic salt over chili's covering all sides. (remainder will be for pork)

Remove all fat and or skin from pork roast and cube into bite size pcs, do not discard the bone, you will place it in the stock pot too. Sprinkle the remaining garlic salt over all of the pork covering all sides.

In large pot over med/med-high heat brown pork. Once brown, add enough water to cover all pork and the bone.

Place flour into a large cup, add cool water and mix into a paste (Like pancake batter). Slowly add flour mixture to the pork and stir, making sure to mix well.

Add remaining ingredients, diced chili's, tomatoes and any remaining garlic salt.

Bring to light boil, then reduce heat to low and simmer for at least 3 hours. Stir from time to time and keep the temp LOW. You can add salt and pepper as well as more garlic to taste.

If mixture becomes too thick, just add a little water to thin.

This Green Chili is multi purpose. You can enjoy as a soup with a tortilla, or you can use to smother burritos etc.

You can freeze any leftovers and save for up to 3 months if you have any leftovers!
