12 eggs
1 lb. butter
2 lb. (4 1/2 c.) dark brown sugar
8 tsp. baking soda
1 lb. M & M's
1 lb. chocolate chips
2 T. vanilla
4 c. white sugar
3 lb. creamy peanut butter
18 c. oatmeal
1 lb. chopped nuts (optional)

Directions:

Preheat oven to 350º.

Mix together oatmeal and baking soda. Add chocolate chips, M & M's and nuts. Mix well and set aside. In a really large bowl, beat eggs, butter, brown sugar, white sugar and vanilla. And peanut butter and mix well. Stir in the dry mixture, making sure candies are evenly distributed and oatmeal is mixed well.

Using an ice cream scoop, place dough on cookie sheet. Bake for 10-12 minutes. DO NOT OVERBAKE!

Allow cookies to cool for 5 minutes before moving to cooling racks.

This is a recipe from the Willow Point Gallery Cookbook, that I've adapted over the years. One thing that I like to do is use half old-fashioned oatmeal and half quick-cooking oatmeal in this recipe. After 10-12 minutes, these may not seem quite done, but remember they continue to bake while on the cookie sheet...so, I repeat DO NOT OVERBAKE these cookies (they can become very hard and crunchy instead of chewy)!
