4 Large Peppers (Red, Yellow, or Orange)
2 cups cooked Quinoa
1 cup cooked brown rice
1 can Garbonzo Beans (can substitute any type of bean)
Diced Peppers (Dice the tops you cut off the peppers)
1/2 small diced onion
1 cup favorite pasta marinara sauce or enchilada sauce
Chopped Tarragon for flavor
Celery Salt for flavor

Directions:
Directions:
Cut tops off peppers and clean out peppers. Use tops for chopping.
Mix all ingredients in frying pan on the stove and cook until peppers and onions are softened.
Spoon ingredients into peppers.
Top peppers with any type of shredded cheese.
Place peppers in baking dish.
Add water to cover bottom of baking dish.

Bake at 375 degrees for 30 to 45 minutes.
