1 box Yellow Cake Mix with pudding in the mix
4 Eggs
3/4 cup Oil (or part Oil and part Apple Sauce to equal 3/4 cup)
3/4 cup Water
1 tsp. Vanilla
1/2 cup Sugar
3 Tbsp. Cinnamon

Preheat oven to 350º
Beat the first 5 ingredients at high speed with an electric mixer a minute or two. Pour half of the batter evenly into a greased 9x5 loaf pan (or 5 mini loaf pans).
Stir together the sugar and cinnamon and sprinkle mixture evenly over batter. Pour the rest of the cake batter over sugar mixture and gently swirl with a knife.
Bake at 350º for 43 to 45 minutes (or 30 to 35 minutes if baking the mini loaves) or until wooden toothpick inserted in the center comes out clean.
Cool in the pan(s) on wire rack.
Optional:
I make a yummy icing to drizzle on top using powdered sugar, milk and a tiny bit of vanilla. Mix it all up to a medium consistency to drizzle. You don't want it too runny and afterwards sprinkle a tablespoon of cinnamon sugar mixture on top of the wet icing. I've also used various holiday sprinkles on top of the wet icing instead of the cinnamon sugar.
