Cake:
2 c flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1-3/4 c sugar
4 eggs
1-1/2 c vegetable oil
3 c grated carrot

Cream Cheese Frosting:
1- 8 oz pkg cream cheese
1 lb powdered sugar
1 tsp vanilla
1/2 square butter
1 c chopped walnuts (optional)

Directions:

Cake:
Mix dry ingredients. Add eggs and oil and mix thoroughly. Pour into a large sheet cake pan. Bake 25-30 min at 350 degrees.

Frosting:
Mix all ingredients with hand mixer until smooth. (I leave the walnuts out and sprinkle them on top of the frosted cake.)

This is a carrot cake recipe we got from Debbie's Aunt Jaquie Petersen while we were engaged and planning our wedding reception. We gave the recipe to some family members, asking them to make the cake for our wedding reception. It was a hit with members of both sides of our family and has been made and shared at many reunions and gatherings since.
