Sicilian Meatloaf Recipe

2lbs ground beef or pork and beef mix
2 eggs
3/4 cup bread crumbs
1/2 cup ketchup or tomato sauce
2 tbsp parsley
1/2 tbsp dried oregano
1 clove garlic ( peeled and minced)
1/2 tsp each of salt and pepper
8 slices of ham
1 1/2 cups shredded mozza or cheddar cheese
a few slices of cheese to put on top at the end

Directions:
Directions:
Mix everything except ham and cheese together in a bowl well
Lay out piece of wax or parchment paper that will fit into 9x13 pan
Spread meat mixture out evenly in a rectangle
Layer ham all over ground meat placing about 1/2 -1 inch from edge
Sprinkle cheese all over ham evenly
Use paper to roll meat up into long loaf
Closing up both ends so cheese does not melt out
Place with paper into 9x13 glass or metal baking pan
Bake @ 350º for 1 1/4 hrs
Place slices of cheese along top to garnish a few minutes before removing from oven to cut into slices to serve.
