9 eggs
1 bag fresh spinach
½ stick butter
1 medium onion, chopped
1 large clove garlic
2 T. milk
⅓ C. parmesan cheese

Directions:
Directions:
Preheat oven to 400°F. Cook spinach in ¼ cup of water in a covered saucepan until just wilted, a couple minutes. Drain water and set aside. Sauté onions in butter in a cast iron skillet, until translucent, about 4-5 minutes on medium heat. Add garlic and cook a minute further. Add cooked spinach to onions and garlic and mix well.
In a mixing bowl, whisk together eggs, milk, and Parmesan cheese, and sprinkle with salt and pepper. Pour the egg mixture over spinach and onions. Use a spatula to let mixture under spinach. Heat the cast iron on stove top until eggs are just beginning to set on bottom. Transfer to oven and bake 15 minutes or so until puffy and golden on top.

Made this for Lynda Brown and Mike and Carol Neff when they stayed with us for Barbara and Lewis Johnson’s 50th anniversary party and it was a hit. Lynda said that it reminded her of a soufflé, the way it puffed up.The Saturday following the spinach frittata Mike and Carol were back and I used asparagus instead of spinach and it worked well. Mike suggested spinach AND asparagus. Mushrooms would have added a lot to this as well and I think I want to play around with some different cheeses. Gouda, bleu?
