1 cup flour
1 cup butter
1 cup chopped pecans
1/2 cup brown sugar
20-24 oz. package frozen raspberries, thawed
2 cups sugar
2 cups whipping cream
sugar and vanilla to taste
8 oz. cream cheese, softened
16 oz. cool whip

Directions:

Mix flour, butter, chopped pecans and brown sugar. Bake in 9x13 pan at 350º for 15 minutes. Cool and crumble. Divide in to half. Blend raspberries and 2 cups sugar. Whip whipping cream, add sugar and vanilla to taste. Blend the cream cheese and cool whip. fold the whipped cream, cream cheese and cool whip into the raspberry mixture. Place 1/2 of the nut mixture in the bottom of a 9x13 pan. Carefully pour raspberry mix into pan. Top with the remaining crumb mixture. Cover with foil and freeze. Remove from freezer about 10 minutes before serving. Cut into desired size. Serves 12-15 people.
