Brownies:
(use a boxed brownie mix or make from scratch with ingredients below).
4 squares unsweetened chocolate, melted & cooled
1 cup butter
2 cups sugar
4 eggs
2 teaspoons vanilla
1 cup flour
1 cup chopped pecans



Mint Layer:
4 tablespoons butter
2 cups powdered sugar
1 teaspoon spearmint extract/flavoring
4 drops green food coloring
1-2 tablespoons milk or enough to make it spreadable.

Frosting:
1 cup milk chocolate chips
8 tablespoons butter
2 teaspoons vanilla

*If using a jelly roll pan, use 2 boxes of brownie mix (or a single version of recipe provided) and double the recipe for the mint layer and the frosting layer.

Stir together brownie ingredients and pour in greased 9x13 pan. Bake at 350º for 25-30 minutes. Cool on rack; then refrigerate.

To make mint later, combine ingredients. Spread on cooled brownies and refrigerate.

To make frosting, melt ingredients in a double boiler. Let cool slightly; spread on cooled mint layer carefully. Let stand for 1 hour.
