Ingredients: Olive oil Cooking spray 2 peeled and sliced medium potatoes in 1/8 in rounds 1/2c diced onion 8oz (about 8 cups) baby spinach 3 pitted kalamata olives 2 whole eggs 3 egg whites 1 c non-fat ricotta cheese or fat free cottage cheese 1tsp. crumbled feta 3 tsp. finely chopped fresh/or dried basil or dill separated into two portions 3 Roma tomatoes sliced in 1/4 inch rounds 1 1/2tsp. Grated Asiago or Parmesan cheese 1 1/2tsp. Low fat grated Mozzarella cheese

Directions:Heat oven to 350. Spray 9" inch pie pan, and line it with potatoes. Cut remaining slices in half and arrange along the side of the pan and bake for 12-15 min. Remove from the oven. In a pan, sautéed onion for 5 min. Add spinach and cook till wilted (2-3 min). Remove from heat and stir in olives. In a bowl beat the eggs and egg whites and combine it with ricotta cheese, feta cheese, and one portion of basil/dill and set aside. Spoon onion and spinach over the potato sand layer in eggs then tomatoes. Bake 20-25 min. Sprinkle grated cheese over the pie with the remaining basil/dill. Bake 5 more min. Cut into 4 slices and serve immediately. |
