Quantities depend for how many people you are cooking or if you like leftover soup, (which Sandor loved) it is excellent reheated.

Russet potatoes
onions
carrots
garlic
caraway seeds
salt
Hungarian red pepper sweet and hot to taste
shortening (Canola or corn oil)

Directions:
Directions:
Chop onions not too fine.
Peel the potatoes & cut them in cubes of 1-2 inches.
Cut the carrots in slices or small sticks or both, whatever you fancy.

Sauté the onions in generous amount of shortening in the soup pot to be translucent. Add the garlic and carrots and saute briefly together, then add the potatoes and water, salt, caraway seeds and the Hungarian sweet pepper (be generous with it since it gives the flavor and also beautiful red color) cook gently for about 15-20 minutes depending on the potatoes. Add the hot red pepper at the end or serve it at the table for everyone to add to their taste.
Serve with sour crème or crème fraiche and Sandor would also add Hungarian kolbasz.
