3 c. all purpose flour
1 T. plus 2 tsp. pumpkin pie spice
2 tsp. baking soda
1 1/2 tsp. salt
3 c. granulated sugar
1 15 oz. can pumpkin
4 large eggs
1 c. vegetable oil
1/2 c. orange juice or water
1 pkg cranberries

Directions:
Directions:
Combine flour, pumpkin pie spice, baking soda and salt in a large bowl. Combine sugar, pumpkin, eggs,vegetable oil, and orange juice in a large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir until just moistened. Fold in cranberries. Spoon into muffin cups. Bake in 350º oven for 25 - 30 minutes.
