3/4 cup cubed cheddar or muenster cheese
1/2 cup chopped dates
1 stalk chopped celery

Dressing

Juice from 1/2 lemon
1/2 cup mayonnaise
3/4 cup orange juice
1/2 tsp. fresh orange rind
Add honey only if necessary

Whisk together the dressing ingredients. Toss together all other ingredients. Combine everything and chill. Serve on fresh spinach with thick slices of whole wheat toast for a simple and luxurious lunch.
