1 whole boneless, skinless chicken beast
6-7 Slices pancetta
3 medium leaks
2 carrots, sliced (optional)
2-3 springs fresh thyme
2 T. olive oil
1 T. butter, melted
Salt and pepper to taste
1/3 cup white wine

Directions:
Directions:
Preheat oven to 400º. Trim and wash leeks, slice into 1/4 inch pieces. Slice carrots if using and add a few springs fresh thyme. Toss leek mixture with 1 T. olive oil, wine, butter and salt and pepper.
Make a small pan of aluminum foil, turning up sides. Place foil pan in small baking pan. Place leeks in center of foil and wrap chicken in pancetta and place on top of leeks. Fold the foil up to cover the leeks but not the chicken. Drizzle 1 T. olive oil over chicken. Bake for 35 to 40 minutes or until chicken is done.
