2 (16 oz.) cans black-eyed peas
1 c. green bell pepper, diced
¾ c. onion, diced
½ jalapeño pepper, diced
pimento, diced (optional)
1½ tsp. garlic, minced (or more to taste)
1 (8 oz.) bottle Italian dressing

Directions:

Combine all ingredients. Chill. Drain before serving. Serve with tortilla chips. Variation: Substitute red bell pepper for green bell pepper, and use pickled jalapeño slices (drained and rinsed) for fresh jalapeño. The BEST however, is to use the FRESH jalapeño! I have never added the pimento, so I don't know what it tastes like, and I prefer to make my own Italian dressing from a packet -the best flavor, I think. However, zesty Italian bottled dressing is also good.
