3/4 pound fresh ricotta
1/4 cup heavy cream
1 teaspoon vanilla extract
1 pint fresh strawberries, hulled and halved or
3 ripe plums or
ripe nectarines, pitted and cut into eighths, or
1 pint fresh figs, stemmed and halved or
(any combination of the above three)
1/4 to 1/2 cup clover honey
Fresh black pepper
Fresh mint sprigs, for garnish

Directions:
Directions:
Combine the ricotta, heavy cream, and vanilla extract in a large bowl and whip using a whisk until light and fluffy, about 1 1/2 minutes or mix with hand held mixer until light and fluffy.

Spread the ricotta on a platter, tope with the fruit,
drizzle with some honey,
season with a sprinkling of freshly ground black pepper.
Garnish with fresh mint sprigs
