1 cup rice
4 boneless, skinless chicken breasts
1-2 tablespoons minced jalapeņo peppers
1 15 ounce can black beans, rinsed and drained
2 tablespoons olive oil
3/4 teaspoon ground cumin
1/4 cup cilantro leaves

Directions:
Directions:
Prepare rice according to package directions.

In a large skillet, heat olive oil.
Brown chicken and cook until no longer pink.
Remove from skillet and set aside.
In a medium bowl, toss hot rice with peppers, cumin, beans and cilantro leaves.
Add rice-bean mixture to skillet and heat through.
For moistness, add chicken broth if desired.
Serve chicken on a bed of bean and rice mixture.

Serve with fresh salsa, limes, and additional peppers.
