Ingredients:  
1 large avocado peeled
2 to 3 plum tomatoes
1/2 cup chopped red onion
1 clove garlic chopped finely
1 tablespoon fresh chopped parsley
1/2 teaspoon fresh oregano
1 tablespoon olive oil
1/2 tablespoon red wine vinegar
4 ounce package crumbled Feta cheese

Directions:
Directions:
Chop Avocado and tomatoes
Add onion and the next five ingredients, tossing to coat
Fold in cheese just before serving.

Makes 2 cups.
Serve with tortilla chips.

Adjust ingredient amounts to taste.
Usually double recipe.
