3 eggs
1 cup vegetable oil
2 cups sugar
2 teaspoons vanilla
2 cups grated zucchini
1 cup crushed pineapple, drained
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 1/2 teaspoons cinnamon
3/4 teaspoon nutmeg
1 cup chopped nuts

Directions:
Directions:
Preheat oven to 350º.
In medium bowl, beat eggs, oil, sugar and vanilla until thick. Stir in zucchini and pineapple; add all dry ingredients, mix well. Pour into greased and floured bread pans. Bake for 1 hour or longer until done in center and toothpick comes out clean. Cool before removing from pan. After completely cooled bread can be wrapped and frozen.
