Banana Pudding Recipe

35-45 vanilla wafers
4 medium bananas
1 cup + 2 T. sugar
6 T. flour
6 egg yolks
dash of salt
3 cups whole milk
1 t. vanilla

Meringue
6 egg whites
12 T. sugar

Directions:
Directions:
Combine sugar, flour and salt in top of double boiler. Stir in egg yolks and milk; blend well. Cook, uncovered, over boiling water, stirring constantly; 5 minutes or until thickened. Remove from heat; stir in vanilla. Spread small amount on bottom of 2 qt. casserole; cover with layer of vanilla wafers.Top with layer of sliced bananas. Pour about 1/3 of the custard over bananas. Continue to layer wafers, bananas and custard to make 3 layers each ending with custard. (You can use a 9 x 13-pan and have one or two layers of wafers and bananas) Beat egg whites until stiff but not dry; gradually adding in the sugar and beat until stiff peaks form. Spoon on top of pudding. Bake 350º for 10-12 minutes or until golden.
