1 pkg dry yeast
¼ cup warm water
2 ½ cups flour
½ tsp baking soda
1 tsp baking powder
1 tsp salt
2 tbsp sugar
½ cup shortening
1 cup buttermilk

Directions:
Directions:
Preheat oven to 400º

Dissolve the yeast in warm water and set aside. Mix dry ingredients in the order above in a bowl and cut in the shortening. When it looks grainy it's time to stir in the buttermilk and the yeast mixture. Mix thoroughly but do not over mix.

The dough is ready to use or you can store in refrigerator for later use. Be sure to keep dough covered.

When ready to make biscuits, place dough on a well-floured counter or board and knead lightly. Roll out. Don't over roll or work the dough. Cut with a biscuit cutter.

Place biscuits on a greased pan and let rise slightly-THIS IS AN IMPORTANT STEP.

Bake for 12-15 minutes in 400º oven.

These biscuits are really light and fluffy. You may need to make a double batch. They disappear quickly. Got this recipe out of the Decatur Daily Newspaper.
