1 1/2 cups brown sugar
1/3 cup oil
1 egg
1 cup buttermilk
1 teaspoon vanilla
2 1/2 cups flour
1 1/2 cups chopped apples (Macintosh)
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon butter

Directions:
Directions:
Preheat oven to 325º. Mix ingredients in this order: brown sugar, oil, egg, buttermilk, vanilla, flour, chopped apples. Pour batter into a 9x13 greased pan. Combine sugar, cinnamon and butter to make topping and sprinkle it evenly over batter. (I usually just sprinkle cinnamon and sugar over batter and dot butter all over). Bake for 45 minutes. It's best served warm with vanilla ice cream.
