Carrot Souffle Recipe

1 lb. carrots, peeled
3 eggs
1 c. oil
3/4 c. sugar
3 T. flour
1 t. baking powder
1 t. vanilla extract

Topping:
3/8 c. cornflake crumbs, unflavored
4 1/2 T. brown sugar
3 T. margarine, not melted
3/8 c. chopped nuts
ground cinnamon, to taste

Directions:
Directions:
Cover carrots with water and cook until soft. Drain and mash carrots in a food processor until smooth. Preheat oven to 350º. Mix in all other ingredients. Place into a 9-inch round baking dish. Mix together all topping ingredients and sprinkle generously over carrot souffle. Bake 40 minutes. Serve warm or at room temperature.
