1/2 medium sweet white onion, grated (it has to be sweet!)
1/2 cup pimentos, diced, with juice
1 teaspoon ground cayenne pepper (more if you like it hotter)
1/2 block of an 8 ounce cream cheese, softened
3/4 cup mayo (heavy duty, do not use low fat!)
3 cups grated sharp white cheddar (has to be white and sharp); I use Cabot.

Directions:

Mix onion, pimento and cayenne pepper until well combined. Add cream cheese and mayonnaise—the Girls prefer Hellmann’s mayonnaise—until smooth and all the ingredients are incorporated. Add grated white cheese and mix until just combined, keeping the texture a little chunky. Enjoy!
