3 TBS olive or salad oil
2 TBS red wine vinegar
1 TBS Dijon Mustard
1 1/2 tsps. dried oregano leaves
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. black pepper
1 cup pitted ripe olives
4 15 oz. to 19 oz. cans garbanzo beans

In a large bowl, mix oil, vinegar, mustard, oregano, sugar, salt, and pepper. Set dressing aside. Coarsely chop olives. Rinse garbanzo beans and drain well. Add olives and beans to dressing. Mix to coat well. Cover and refrigerate at least 1 hour to blend flavors.
