1 lb. ground beef or turkey
2 cans pinto beans
2 cans black beans
2 cans sweet corn
1 large can diced tomatoes
1 cup water, or to desired consistency
2 cups medium chunky salsa, or to taste
shredded cheese - cheddar, Colby, Monterey jack
sour cream
corn chips (or Fritos)

Directions:
Directions:
Open all of the cans of beans, corn and diced tomatoes. Drain the beans and corn. In a large stew pot, add all of the beans, corn, tomatoes, water and salsa. Bring to a simmer. In a separate pan, brown the ground beef or turkey. Salt and pepper to taste. Add to the main pot. Simmer for about 5 minutes. Ladle into soup bowls. Top with sour cream, shredded cheese and crumbled corn chips.

Variations:
-You can use more salsa or less, and use mild or hot - depending on what your family likes.
-You can add more water or less. Less water makes it more like a stew instead of a soup.
-You can add cheese and sour cream right into the pot and simmer until cheese is melted. This will create a thicker broth and create a more savory flavor.
-You can use your favorite kind of corn chips, or use Fritos for a saltier crunch.
-If you half the recipe, it will feed about 5 people. Or double the recipe for a big crowd.
