Ingredients:  
1 c farro cooked
1/2-1 c carrots, finely chopped
1/2-1 c red pepper, chopped
arugula (or other green), mix in to your liking
parmesan cheese, to your liking (i used about 1/2 c grated)

dressing:
3 tbsp olive oil
2 tbsp lemon juice
1/2 garlic cloved, muddled
1/4 tsp ground mustard
1/2-1 tsp salt

Directions:

Cook farro and let cool, then combine first 3 ingredients (this will last for days, undressed in refrigerator). Right before eating, dress and toss with arugula and parmesan.

When muddling, ingredients are combined by pressing them together with a tool called a muddler.
