Pecan Syrup:

1 c maple flavored pancake syrup
5 T pecans, toasted and chopped

Pancakes:

1 c buttermilk pancake milk
1 c cold water
1/3 c canned pumpkin
1/2 tsp grounded cinnamon
1/4 tsp grounded ginger
Nonstick pan spray
Butter room temperature

Pecan Syrup Preparation:

Combine syrup and pecans in a small microwavable dish. Heat in microwave until hot about, 25 seconds. Set pecan syrup aside and keep warm.

Pancake Preparation:

In a medium bowl whisk pancake mix, water, pumpkin, cinnamon, and ginger until just blended. Do not over mix batter should be lumpy.

Spray a heavy griddle with nonstick spray over medium heat. Spoon 2 tablespoons of batter onto the griddle to form each pancake. Cook 2 minutes or until bubbles appear, then turn pancake and cook for 2 minutes longer. Transfer to plate. Top with butter and serve with warm syrup.
