1 can Ranch StyleŽ Beans
1 can Ro*telŽ tomatoes
1 large can of tomatoes with juice
2 cans minestrone soup (we use ProgressoŽ)
1 lb. of ground beef *
1 onion, chopped (optional)
* You can substitute ground turkey if you are going for low fat, or use "Crumbling", which is a vegetarian 'meat substitute' in the dairy case.

Directions:

Brown meat and onions in a large pot, season to taste.
Start dumping cans of stuff in! Heat and serve.

You can expand the recipe by adding other cans of veggies to make it go further. Add juice to the mix unless it is a starch (corn, potatoes, or creamy colored juice). We add cooked pasta sometimes. I planned on cooking this on a Harvest Moon race on s/v Last Trade, but alas it was too hot for soup!
