Ingredients: 9 lasagna noodles 1 large onion;chopped 2 Tbsp. butter 1 8 oz. pkg, softened cream cheese (can use light) 1 1/2 cup cream style cottage cheese (can use light) 1 or 2 eggs lots of basil,spices,salt, pepper 2 cans cream of mushroom soup a little milk 1/3 cup cup white wine 1 lb. fresh shelled shrimp,cooked and 1/2'd 1 71/2 oz. can good crabmeat 1/4 cup Parmesan cheese 1/2 cup shredded american cheese,sharp
You can mix in Ragu, tabasco,bay seasonings,oregano, etc.. etc...

Directions:1. Cook lasagna noodles according to directions. Drain well. 2.Put 3 on bottom of greased 13x9x2" pan. 3.In medium size pan cook onion in butter until tender. 4. Blend in cream cheese. 5. Stir in cottage cheese,eggs,spices. 6. Mix together soup, milk, wine. Add shrimp and crab.
Put a layer of onion cheese mixture over noodles,then a layer of fish mixture. Repeat layers 7. Sprinke with Parmesan cheese at end.
Bake uncovered 350ºF. for 45 minutes. Top with shredded American cheese,bake 2-3 minutes more until cheese melts. Let stand for 15 minutes before serving. |

Notes: I got this recipe from my good friend and former special ed teacher Amy Ross. She notes that if you make it using "light" ingredients(as indicated) it is only 340 calories per serving. It can be made the night before ,cook and let sit in fridge. It is delicious!
