4 tbsp. (60 ml) butter divided
3 tbsp. (45 ml) flour
3/4 tsp (3 ml) salt
2 c (500 ml) milk
1 1/2 c (375 ml) shredded Canadian Colby cheese
1 c (250 ml) sliced fresh mushrooms
1/4 c (50 ml) chopped onion
12 eggs beaten

Directions:

Melt 2 tbsp. (30 ml) of the butter in a saucepan. Blend in flour and salt. Gradually stir in milk. Cook and stir over medium heat until mixture comes to a boil and thickens. Remove from heat and add cheese and stir until melted. Cover and keep warm. Melt remaining 2 tbsp. (30 ml) butter in a large frypan. Saute mushrooms and onion until tender and liquid has evaporated. Add eggs and cook and stir until mixture is set. Stir cheese sauce into eggs. Garnish.
