1/3 cp white wine
1/3 cp chicken broth
1 med onion, cut into 3-4 pieces
2 whole garlic cloves
3 Tbls butter, melted
2 tsp dried rosemary - divided
2 tsp dried thyme - divided
1 tsp dried sage - divided

Turn the oven on to 350*. Remove the giblet bag. Rinse the chicken with water, inside and out. Pat dry with paper towel.

Melt the butter in the microwave, then stir in 1 tsp rosemary, 1 tsp thyme, ½ tsp pepper and sage. Loosen the skin over the breast and thighs and spoon some of the herb butter mixture under the skin and rub it around.

Put more herbs into the cavity of the chicken - 1 tsp rosemary – 1 tsp dried thyme – ½ tsp sage. Fill cavity with onion and some garlic.

In a covered pan large enough to hold the entire chicken pour the white wine and broth. Set the chicken in the pan breast up, put the lid on and put it in the oven. Roast for at least 1 hr. for 2lb chicken - add 15 min for each additional 1/2 lb.
