4 6" Italian seasoned sausages with casings removed
(easy if you run hot tap water over frozen sausages and slide casing off)
Slice while frozen into 1/2 " slices and add to Large soup pot
Fry with oil chopped onions, celery, parsley, diced carrots and chopped garlic slices& thyme
Season and stir while frying, then add couple quarts of chicken broth and stir in browned bits
bring to slow boil to cook veggies and then add pasta that you have pre cooked for the soup
Taste for seasoning and adjust
4 cups Spinach or kale roughly chopped add to boiling soup and cook for 20 mins
Take 2 beaten eggs and add 1/3 cup grated parmesan cheese and stir in well
While soup is swirling, pour in egg mixture and let cook for a 15 mins
Serve with crusty Italian bread

Easy to make and no need to precisely measure
The pasta should be macaroni size and I use just a couple handfuls in a separate pot of boiling water otherwise if add it raw to the soup it will decrease the amount of soup liquid
