1 1/2 lb Andouille Sausage
3 1/2 -4 lbs Chicken skinned
1/2 c Vegetable Oil
1/2 c All-purpose Flour
2 lg Onions, chopped
1 lg Green Pepper, chopped
1 c Celery, chopped
3 Cloves Garlic, minced
2 qt. Water
2 tsp Creole seasoning
1/2 tsp Hot Sauce
1/2 c Green Onions, chopped
1/4 c Fresh Parsley, minced

Directions:
Directions:
Cut sausage lengthwise into 4 pieces, cut pieces into 1/2 "lengths. Brown in Dutch oven; set aside. In drippings, brown chicken;set aside. Combine oil and flour in Dutch oven. Cook over medium heat, stirring constantly, until roux is the color of chocolate (about 30 minutes). Add onion,pepper, celery, and garlic. Cook until veggies are tender. Add water; bring to boil.

Reduce heat and simmer, uncovered, 45 minutes. Add chicken, Creole seasoning, and hot sauce; cook until chicken is tender ( about 1 hour). Remove chicken and set aside to cool. Add green onions and parsley to gumbo. Debone chicken and chop coarsely. Add chicken and sausage to gumbo. Heat thoroughly. Serve over rice.
