1 pkg. spice cake mix
2-3 eggs (whatever the box says)
2 C. shredded carrots
1 can (8 oz.) crushed pineapple drained
1 C. pecans, chopped
Frosting:
2 pkg. cream cheese, softened
2 C. powdered sugar
1 tub (8 oz.) cool whip topping

Directions:
Directions:
1. Preheat oven to 350º
2. Prepare cake mix as directed on package. Add the carrots and pineapple & blend well.
3. Add chopped nuts if desired.
4. Grease 2 (9 inch) pans or a 13x11 " pan. Pour batter into pans
5. Bake the length of time directed on box. Cool.
Frosting:
6. Mix softened cream cheese and sugar until well blended.
7. Stir in cool whip & mix well.
8. Frost cake. Refrigerate cake.
