8 slices bacon chopped
2 c (500 ml) all purpose flour
2 tbsp. (30 ml) sugar
1 tbsp. (15 ml) baking powder
1/2 tsp (2 ml) salt
1 1/2 c (375 ml) shredded old Canadian Cheddar Cheese
1 egg beaten
1 c (250 ml) milk
3 tbsp. (45 ml) butter melted

Cook bacon until crisp. Drain well reserving 1 tbsp. (15 ml) drippings. In large bowl combine flour, sugar, baking powder and salt and stir in cheese and cooked bacon. In small bowl combine egg, milk, butter and reserved bacon drippings. Add to dry ingredients and stir just until moistened. Divide batter among six large 3" (7 cm) greased muffin cups (cups will be very full). Bake in preheated 400ºF (200ºC) oven 25 to 30 min. Serve warm with butter.
