Ingredients:
Ingredients:
(aka "Oriental Cabbage Slaw")
DRESSING:
¾ c. cooking oil
⅓ c. red wine vinegar
½ c. sugar
1 seasoning packet from oriental flavor Ramen® noodles
SALAD:
green and red cabbage, moderate fine chop (4 parts green to 1 part red)
carrot, grated (1-2 depending on size)
Note: These ingredients replace the 1 lb. of broccoli slaw in original recipe. (I do about 20 oz. which is about 6-7 c.)
1 small or ½ large onion, chopped
1 c. Spanish peanuts
½ c. sunflower seeds

Directions:
Directions:
Mix all dressing ingredients together and heat until sugar dissolves.
Chill several hours or overnight. Mix all salad ingredients together.
One hour before serving, break up a package of Ramen noodles; add to salad, then add dressing.
If we have had broccoli, I peel the stalks, grate and use them. I don't think they affect the result; it is just my waste-not style. The theory about the 'one hour' is to keep the noodles crisp, but I think it is fine the next day. A thing I like about this recipe is that all the ingredients are durable and thus easy to keep on hand. We keep the sunflower seeds in the refrigerator and the peanuts in the freezer. I am generally not picky, but I can spot a stale nut a block away. This recipe is easy; it takes longer to talk about it than to do it!
