1 cup wild rice
2.5 cups boiling chicken stock
1 lb. fresh mushrooms sliced
4 Tbsp. butter
˝ cup chopped onions
˝ cup chopped celery
˝ cup chopped green pepper
˝ cup chopped red pepper
1 pint half and half cream
3 cups diced chicken meat
2 tablespoon cooking dry sherry
1.5 quarts chicken broth
8 slices bacon

Cook chicken and keep stock. Combine wild rice and 2.5 cups chicken stock and simmer for 1 hour or rice is done. In large pan sauté mushrooms in 2 tbsp. of butter until liquid disappears about 10 minutes and set aside. Heat remaining butter in pan and add onions, celery, green peppers and red peppers, sauté until tender 3-5 minutes. Add chicken broth to large pan till boiling, add in vegetables, chicken, and mushrooms and simmer till everything is hot.
