3 chicken breasts (save the broth)
2 carrots
3 potatoes
2 zucchini
2 yellow squash
1/2 red bell pepper
1 garlic clove, minced
1 (8 oz.) can of tomato sauce (or stewed tomatoes)
1/4 cup cilantro leaves, chopped
1/2 - 1 teaspoon chili powder
1/4 teaspoon dried basil
1 chicken bouillon cube or paste
garlic, onion and/or celery salt to taste
top with cheese, tortilla chips and avocado

Directions:
Directions:
Boil chicken (for about 20 minutes or until done) and remove to shred. Save the broth. Add chopped veggies (except cilantro) and tomato sauce to chicken broth water. Bring to a boil and reduce to a simmer. (carrots and potatoes can be added first if you want - they take longer to cook). Add cilantro and spices during the last few minutes of cooking. Salt and pepper to taste. Top with cheese, tortilla chips and avocado.
