3/4 lb. sausage (I use half sweet Italian and half spicy Italian)
1 medium onion, chopped
1 (28 oz.) can diced tomatoes
Mozzarella cheese - I use the big round one at Trader Joes
1/4 cup pesto sauce (if you don't make your own, I love the one from Trader Joes cold aisle)
10 oz. ziti or penne pasta, freshly cooked
8 cups ready to use fresh spinach leaves
1 cup grated Parmesan cheese

Heat heavy large saucepan over medium-heat. Add sausage and onion and sauté until sausage is cooked through, breaking up meat with back of spoon. Add tomatoes with juices to pan. Simmer until sauce thickens slightly, stirring occasionally for about 10 minutes. Stir in pesto. Season sauce with salt and pepper. Lightly oil 9x13 baking dish. Combine pasta, spinach, mozzarella cheese and 1/3 cup Parmesan cheese in a very large bowl. Stir in tomato sauce. Transfer to baking dish and sprinkle with remaining Parmesan. Bake at 375º until the sauce bubbles and the cheese melts.

Serve with salad and crusty bread.
