2 c. vine-ripened tomatoes, chopped
1 (15oz.) can black-eyed peas, drained
1 (15oz.) can black beans, rinsed and drained
1 (15oz.) can whole kernel corn, drained
½ c. red onion, diced
½ c. green bell pepper, chopped (other color pepper may be used)
1 (4oz.) can jalapeño peppers, diced
1 c. Italian-style salad dressing
½ tsp. garlic salt
1 tbsp. extra-virgin olive oil

Directions:
Directions:
Combine fresh tomatoes, black-eyed peas, black beans, corn, onion, green bell pepper and jalapeño peppers.
Season with Italian-style salad dressing and garlic salt. Add olive oil and mix well. Best if chilled prior to serving. Serve with tortilla chips.
