1 1/2 lbs standing rib roast, boned and machine sliced bacon thin, or good Sukiyaki meat.
4 stalks celery, cut diag. *
2 onions sliced length wise *
1 bunch green onions cut into 2" lengths
1 cup mushrooms
1/2 cup fresh spinach, slightly cooked
1 bunch watercress *
1/2 cup bamboo shoots
bean curd *
bean sprouts *

* may or may not be used

Sauce:
1/4 cup soy sauce
2 tbsp whit wine or Sake
1/2 cup water
4 tsp sugar
salt to taste

Directions:
Set electric skillet to 260º. Brown meat in suet after suet is melted in frying pan. Remove 2/3 of meat. Add 2/3 of vegetables and 1/2 sauce. Turn very deftly and cook 5-6 minutes, being careful not to intermingle meat with vegetables any more than necessary.

Continue this process until all are served and all ingredients have been used.

This can be prepared in advance and alternated attractively on a large platter. Can be kept in refrigerator until ready to cook and serve.

This was Sam Barr's recipe he got in Japan. It is pronounced Ski-yaki. The Japanese would use a small hibachi or grill to prepare this.
