1 cup sugar
2 tbsp corn starch
1/8 tea salt
1 egg
3/4 cup water
3 tbsp lemon juice
1 tsp grated lemon rind

Directions:
Directions:
Mix together sugar, cornstarch and salt. Add beaten egg, water, juice and zest. Put all into a sauce pan and heat until thick. Cool before spreading.

This recipe was written in Sam Barr's handwriting. A picture of it is on this page. My grandmother, Georgie Barr, would put this over her pound cake. There is another recipe called Lemon Sauce that was attributed to my grandmother. It contains milk and butter.
