1 lb ground chuck
1 chopped onion
1/2 green pepper diced (optional)
1 c quick cooking rice
1 envelope sloppy joe seasoning mix
1 (7-8 oz) can tomato sauce
1 1/2 c water or tomato juice
salt and pepper

Break up the ground chuck in a skillet and stir fry for 5 min or until pinkness disappears. Stir in the remaining ingredients and cover. Simmer 20 min. Season to taste. Add a little more hot water if mixture is too thick.

For a casserole sauté the meat and mix everything together in a 1 1/2 qt baking dish. Cover. Bake at 350 degrees F for 30 min. Uncover. Top with diced cheese and sprinkle with crumbs. Broil until cheese melts.
