4 TBSP Butter, unsalted
1 head of Cauliflower, small, cut into florets
1/2 tsp Kosher salt
1/2 C Red onion, thinly shaved
1/4 C Pecorino or Parmesan cheese, grated
10 each Mint leaves, chiffonade
1 TBSP Lemon juice

Directions:
1. Melt butter in a stainless steel sauté pan over medium heat, whisking until butter turns light brown and has a nutty aroma (see note). Remove from heat.
2. Toss cauliflower with brown butter and 1/2 teaspoon salt, then transfer to a baking sheet and roast in a preheated 500-degree F oven for 15 minutes or until just tender.
3. Toss hot cauliflower with onion, pecorino and mint in a large mixing bowl. Drizzle with lemon juice and season with salt. Transfer to a serving dish and serve hot.

Notes:
It is important to use a stainless steel pan when making brown butter, so you can see butter change color.

This is excellent!!! I substituted pecorino for parmesan, and it tasted the same.
