For a small pan use almost a cup of cornmeal, for a large pan use a heaping cup of cornmeal
1 tbsp flour
1/4 tsp soda, for large pan 1/2 tsp.
1/4 tsp baking powder, for large pan 1/2 tsp
1 tsp salt
1 egg
about 1 cup buttermilk
bacon grease

Directions:
Directions:
Preheat oven to 400-450º.
Melt enough bacon grease in iron skillet to cover the bottom.
Mix all ingredients except buttermilk. Add buttermilk slowly until mixture is a yellowish white.
Pour mixture into hot bacon grease.
Cook in oven for about 25-30 minutes.

Daddy (Sam Barr) used to melt enough grease to pour about a tablespoon into the finished batter before pouring in the iron skillet.
