Veal cutlets (pounded thin)
2 eggs plus 2 tbsp. water
flour
bread crumbs
1/2 to 1 lb mozzarella cheese
1 (14 oz) tin tomato sauce
1/4 tsp oregano
salt and pepper
parmesan cheese
paprika

Directions:
Directions:
Season veal with salt and pepper. Roll in flour and dip in beaten eggs and water mixture and then roll in bread crumbs. Refrigerate two to three hours. Brown cutlets lightly. Place in a casserole dish. Put a slice of mozzarella cheese on each piece of veal. Mix tomato sauce and oregano and simmer. Pour sauce over top of veal. Sprinkle generously with parmesan cheese. Sprinkle paprika on top. Bake in 350ºF oven for 20 to 25 min.
