1 cup grape tomatoes, quartered
15 ounce can garbanzo beans, rinsed and drained
1 cup cooked quinoa
2 tablespoons red onion, minced
2 tablespoons cilantro, minced
1 1/2 limes, juiced
1 cup cucumber, diced
1 medium avocado, diced
salt and pepper to taste

Directions:

Combine all ingredients except avocado and cucumber, season with salt and pepper to taste, keep refrigerated until ready to serve. Just before serving add cucumber and avocados, mix gently.
